Uncle Bo's - February 2013 "Expect the unexpected!"

Shananigans, Kelly, Donato, and I hit up Uncle Bo's for an entirely different take on nachos last Friday night. The newly furnished back room was bustling but we were still seated promptly.  The 'chos, beers, cocktails, and sparkling wine came fast and furious but unfortunately our server forgot waters even after a second ask.  Also for a brief moment we had her convinced that we were professional food writers and that the manager was on his way to give us a true VIP experience.  Like the glasses of water, the manager failed to make an appearance.  Still it all comes down to the nachos and there was no disagreement among the hungry four-some.  We had hit the nacho pot of gold at the end of the rainbow and it was time to do some gobbling!

$14.95 is not cheap for a ticket to nacho-land but in the end there were no complaints.  Bob's Big Nachos are served on crispy won ton chips with onions, mushrooms, mozzarella  and (on the side for us special) ham and kalua pig.  

Shananigans (4) - Shannon liked the browning on the cheese and the generous portion size. RAD: Won ton Chips, Ham and Kahlua Pork Sauce. LAME: Nothing spicy.  Siracha would be awesome! The topping to chip ratio is a 4.  Besides the menu-listed ingredients, there was cilantro, tomatoes, pico, sour cream, and oyster/sweet chili sauce.  Shannon thought that the waitress was nice as well!

Donato (5) - A perfect score from the new blogger!  Donato thought the presentation was beautiful but with his keen eye he did observe a bit too many chips with no cheese.  Like Shannon, he noted that the cheese was nicely browned.  RAD: The won ton chips were not greasy and had a wonderful texture and flavor.  LAME:  The cilantro was too old and hence did not have enough flavor.  Would have preferred baby cilantro.  In the end, Donato rated the topping to chip ratio a perfect 5 and thought that the Asian toppings w/ mushrooms were very unique.  Bountiful and beautiful!

Steve  (4) - I also really appreciated the subtle browning of the cheese and the overall balance of colors in the presentation.  RAD: I loved that simple fact that the onions were roasted rather than served raw (can be too jarring and sharp).  The nachos did collect some liquid on the bottom of the plate that I was worried would make the won ton chips too soggy.  In the end it actually was amazing because the chips acted as "yum sponges" for the lovely oyster sweet chili sauce.  The toppings tasted good on their own even without the chips!  Nice thick napkins!  LAME: Lacks heat and maybe just a little too expensive? The topping to chip ration was a solid 4.  A lot of trial and error went into making these nachos as the Asian flavors blended really nicely with the more traditional ingredients.  For instance the use of mozzarella gave each bite a nice underlying creaminess and a more sharp cheese would have really been a mismatch with the sauce.  Uncle Bo's is pushing the boundaries of nacho-ness but staying true to its roots!

Kelly (4) - Kelly thought the nachos looked baked and noted that the on the side sour cream and salsa was a plus!  RAD: The won ton chips are great and stand up to the PRESSURE of the toppings.    LAME: Lack o spice.  Kelly also loved the classic pairing of sparkling wine with nachos.  "So Yummy!"
