Homemade Chorizo Breakfast Nachos on the Mainland



I know this is not your typical nacho blog post, but I wanted to share with all you nacho connoisseurs out there my most amazing experience with chorizo breakfast nachos.  A few weeks back I visited some friends on the mainland.  One of my most favorite people in all the land, Jana, drove all the way from Rancho Cucamonga to San Diego to pick me up at the airport and then drive me back to her house.  When we finally arrived, I was greeted with a sign that had my name on it, mimosas and chorizo breakfast nachos.  First off, I fucking love chorizo and miss it being a common food.  So then she put some scrambled eggs, two kinds of cheese, guacamole, sour cream, salsa and fresh cut tomatoes on the organic corn tortilla chips with the chorizo.  Et voilĂ !  Breakfast nachos.  They tasted just as delicious as they sound.  So next time you have some friends over and you are wondering what to make for breakfast…pull out the tortilla chips and pile the toppings on.  Nom nom nom nom nom nom nom.  Oh and then after the nachos...we drank more mimosas and jumped on a trampoline.
