Panguitch Lake Cabin Nachos in Panguitch, UT - MAINLAND EDITION



After a long day of hiking in Bryce Canyon where we did two hard hikes (Hidden Canyon and The Narrows...see pics below), it was my turn to cook dinner for the family at the cabin.  I put on my nacho pants and proceeded to make nachos for dinner from whatever we had leftover from the week’s meals as well as some pre-purchased ingredients.  I was stoked to be able to do most of the shopping for the nachos at Trader Joe’s, man do I miss that store.  We used both blue corn and tri-color corn tortilla chips with flax seeds as the base.  Cyreeta and I danced in the kitchen to fun music while we and prepped all the toppings.  Once everything was ready, we layered the ingredients with cheese in large Pyrex dishes covered with foil for quick cleaning.  Against the wishes of the group, I put zucchini on the nachos.  Many opposed me and it was close to nacho mutiny.  If I wouldn’t have told them they would have never noticed as it would have blended in with everything else but alas they saw me buy it at the store and were against it from the start. I love sneaking yummy veggies onto nachos, just don’t let them see you put it on there and they will never know!  I also love pineapple on nachos which was embraced more positively from the group.  We made guacamole from fresh avocados that did not cost $2.50 each and baked everything before adding the final touches of the cold toppings on top.  I made one spicy and one regular so everyone could be happy.  After dinner, Papa Leddy played us some songs on his guitar (see videos below) and I passed out extremely exhausted from a week of hiking in Utah and battling a sinus infection. 
Turkey chili, black beans, hamburger, zuccini, tri-colored peppers, pineapple, corn, sour cream, fresh guacamole, 4 cheeses, jalapenos all layered like lasagne with flax seed blue corn, tomato, and spinach tortilla chips

 

Shananigans (4.75) – PRESENTATION: Not sure the chips will hold up.  Looking forward to all the flavors and I hope everything is cooked in the middle layers. RAD: So cheesy, pineapple is always my favorite on nachos, zucchini is a nice touch. LAME: Chips got soggy, needs more olives, we drank all the tequila days ago.  TOPPING TO CHIP RATIO: 4.5. Ummmm, perfect for nacho enchiladas, borderline too many toppings for nachos.  We had to use the extra chips on the table. Yummy flavor.  Dancing and prepping the nachos with Cyreeta was the best part of the night.  Love my sister!  Kitchen sink SmörgÃ¥sbord Panguitch Cabin nacho enchilada lasagna.


 

Mar (5) – PRESENTATION: Over the top! Lots of guacamole and sour cream. RAD: Red bell pepper and pineapple. LAME: N/A. TOPPING TO CHIP RATIO: Excellent!  Mountain air with a view of the lake.

 

Nacho Brother (6) – PRESENTATION: Colorful, vibrant, unsure about my feelings about zucchini on my nachos though. RAD: Rollerblading (only in the 90s). LAME: Taxes. TOPPING TO CHIP RATIO: Great (given the side bowl of chips.) Got attacked for not wearing nacho-themed attire, very unprofessional.


 

Senior Loosecannon Esteban Papa Legenddius Leddy (5) – PRESENTATION: I got yelled at!! colorful, everything impressive, massive, layered by a pro. RAD: Ghost extract fire sauce, unbeatable.  nachos!!!! LAME: Abel, leaky sink, anyone walked the narrows. TOPPING TO CHIP RATIO: 5, toppings were incredible.  Nachos were late and there was a cat in the room.  Service: sarcastic.  Hostess dressed to impress. Carmen Miranda made a guest appearance.


 

Deadly Jewels (5) – PRESENTATION: Nachos were prepared with amazing nachos, leggins, and shirt.  Amazing dollops of guacamole.  I can hear them sizzling. RAD: It's a rainbow of colors! LAME: The margaritas are all gone.  TOPPING TO CHIP RATIO: 5.  Best family dinner of the night.  So fun being helper to the chef.


 

Alikeeza (5) – PRESENTATION: Beautiful colors, doesn't even look like nachos…interesting.  But awesome.  So many toppings.  Like nothing I've ever seen. RAD: Pineapple!!! LAME: Zucchini. TOPPING TO CHIP RATIO: 5, perfect.  Awesome!!!!




Abel (4) – PRESENTATION: Amazing!  But/Big but!!! I do not think nachos should have zucchini and they are missing salsa and tomatoes.  RAD: The pineapple added was amazing.  LAME: There was no salsa or spice which made them a little bit on the dry side.   TOPPING TO CHIP RATIO: Perfect! I love nachos when you need extra chips to finish them.  I feel I get my money's worth.  Good nachos but could use salsa, spice, tomatoes, NO

Just around this corner the chain disappears and it gets super scary!  I surprised even myself with being able to do this part of the trail and my debilitating fear of heights.
The Narrows is super slow going because you have to walk through the river and make sure you have sure footing.  The rocks are slippery and the river is cold.  SO damn beautiful.

Gets deep in parts...we were lucky it wasn't too deep when we were there.
