Nachos in Paradise: Jana's homemade breakfast nachos con chorizo

My work gave me an extra floating holiday this year on New Year's Eve which meant I had a 4 day weekend! There wasn't much going on for me on Oahu, so I last-minute hopped on a plane to spend the holiday with my super bestie, Jana, in Rancho Cucamonga. We've been friends since before MySpace (she was totally in my top 10) and it had been far too long since I had seen her. I realized I was overdue when I saw a video of her second child (that I had yet to meet) was taking her first steps. Plus who doesn't have New Year's Eve in Rancho Cucamonga on their bucket list?

As is tradition when I visit Jana, she made breakfast nachos! The coolest part about this visit was that her oldest child was old enough to be a part of it and we got to teach him just how epic breakfast nachos are. She cooked up some chorizo and we had not just one, not just two, but three kinds of cheese. Fresh avocado (that didn't cost $3 for one), fresh cilantro, Mexican crema, nom nom nom. We even had a bottle of champagne and a bottle of tequila to accompany the breakfast nachos that we had won at a white elephant party the night before. It's always okay to drink tequila with nachos.
