Chilaquiles at Coco's Kitchen - PUERTO VALLARTA EDITION

Chilaquiles are basically the nachos of breakfast. Delicious tortilla chips simmered in rojo or verde sauce topped with queso fresca, sour cream, onions, cilantro, and usually a fried egg. I LOVE CHILAQUILES!!! Obviously when I saw them on the menu for our first breakfast in Puerto Vallarta, I had to order them.

When the plate came out they looked so fresh and lovely. The three chips standing up in the beans was a nice touch of flair presentation. The chips were smothered in verde sauce and all my favorite things. They didn't mess around when it came to the sides of hot sauce. They brought out two giant bowls!  The hot is definitely HOT! I wanted to drink it. The verde sauce was bursting with flavor and the eggs were perfectly runny so they mixed in with that yummy sauce as soon as they were broke. Even though the chips were soaked through with verde sauce, they were somehow still crunchy. Puerto Vallarta magic! The only thing I would have changed is adding more cheese because I have a cheese problem and there's never enough cheese. The hot sauce kicked it up that perfect notch to bring it to my perfect spice level. The cafe was open air, cute, and jungly with mostly outdoor seating among the trees, lots of old bricks, and handsome friendly waiters. Did I mention how handsome the waiters were?  Hola, guapo!

Fun fact: You can turn any leftover nachos you have into chilaquiles at home. It is the perfect way to eat them a second time. The chips are usually already soggy so simmering them in sauce will just make them that much better. Add some fresh ingredients from home and a fried egg and you have a whole new deliciousness.
