Oahu Karaoke Casa - Homemade Nacho Pie!

Kate and Eric graciously hosted an intimate taco night at their Manoa villa.  Alas, I was the only one to show up and we decided it was too much work to make a bunch of tacos so we made nacho pie instead!  Chef Eric layered a giant dish with chips, eggplant, zucchini, black beans, cheese, fresh jalapenos, and red/orange/yellow sweet peppers.  After baking, he topped them off with fresh cilantro and tomatoes.  He sliced us up pieces of nacho pie out of the dish and we dug in.  They were super delicious.  Lots of flavor!  The chips got a little soggy from the plethora of toppings layered on them.  We dined in the open air table and drank some blended cantaloupe concoctions.  After nachos, we sang some home style karaoke from YouTube videos with a cardboard paper towel tube as a microphone.  It was awesome.




Don Julio Frijoles (5) - A melody of colors in a pie dish. RAD: Served in the gorgeous chez oahu garden, plenty of veggies and jalapenos. LAME: Service could be better. T:C Ratio=3, good ratios, but bottom layer soggy.  Home style authentico cocino!  After nachos are finished they do karaoke from YouTube sung through a toilet paper tube.


Frozen cantaloupe pieces, rum, ginger simple syrup, orange juice and whatever else we felt like throwing in.  Super refreshing and delicious!




Katia (5, duh) - Very colorful, love the fresh herbs RAD: Plethora of veggies, full of love, fresh jalapeno, eggplant, squash. LAME: Who ate all the sour cream ni the casa. T:C Ratio=Black bean, JALAPENO, tomato, eggplant, squash.  Love dining al fresco in Manoa.  Spunky is so cute.  Delicious cocktails.  Karaoke-sexy style, DJ Spunky.

Shannon (4) - Layered and beautiful nacho pie! RAD: Sliced like pie.. LAME: No olives, sour cream or guac, but we worked with what we had, Chips got soggy in the middle. T:C Ratio=4, needed to get more chips, too many toppings.  Lovely Cuban music playing, mood lighting and open air seating.  Kate did give out the smallest napkin in all the land which was not conducive to nachos with more toppings than chips.  We got messy.
