Campfire cooked cabin nachos in the Pennsyvania countryside - MAINLAND EDITION

The highlight of my vacation to Philly was the 3 days we spent at the cabin in rural Pennsylvania.  There was no cell phone service or running water.  We cooked all of our meals in the campfire and drank whiskey for breakfast.  The boys played live music off and on all weekend while I served up fresh squeezed margaritas and palomas.  We hiked some of the Appalachian Trail and explored the woods on the property.  When it came time to leave, I did not want to go.  The cabin is magical. 

While all of our meals were incredibly delicious, the cabin nachos stole the show.  Blue corn tortilla chips, two kinds of cheese, campfire grilled sausage, onions picked from the garden, freshly shucked corn, and some random pickled veggies.  We layered all the ingredients in a large metal pan and found some hot coals to cook the nachos on. The tricky part was heating them up enough to get the cheese melted and at the same time not burn the chips.  While the nachos baked, we drank more whiskey and the boys played some songs.  It was like my own private concert for 3 days.  I was in heaven.

When the nachos were finished, we sat at the outdoor picnic table with the springtime sun shining down on us. We were just feet from a babbling stream and surrounded by green nature. The nachos were delicious!  The flavor combination of the campfire smoked sausage, so much melty cheese, and fresh corn was amazing. This will definitely go down in nacho history as one of the best nacho experiences. 



Wayne Sangria (6) – PRESENTATION: Cooked in a pan over a campfire.  Eating riverside.  Great palette.  RAD: Local spring bunch onion, kielbasa, blue corn chips. LAME: Not the best quality of cheese. TOPPING TO CHIP RATIO: 5+, so much stuff.  Someone stashed a pickle.
 


 

Spoon Ferguson (3.5) – PRESENTATION: Where’s Waldo?  Plenty of colors with sausage, fresh onion. RAD: FRIENDS!  Blue chips!  FRIENDS!  (fresh cut onions).  LAME: Done over the fire pit so hard to melt cheese. TOPPING TO CHIP RATIO: 3.5, spread out.  They don’t have a layer problem.  Homemade in the woods.  Big bites were best!  Love being here.  Cabin Life.
 


 

Shananigans (4.82) – PRESENTATION: Lots of toppings but the cheese doesn’t look melted. RAD: Tastes like campfire, one of my favorite smells. Being here at the cabin with the boys is priceless. LAME: Cheese wasn’t melted enough.  I live 5,000 miles away from the cabin.  Yet again, I cannot read my own writing on the score card.  Damn it! TOPPING TO CHIP RATIO: 5, perfect. It doesn’t need much layering if you spread it out enough. Corn added lovely sweetness.  Nacho vacation, this life is a dream.
